my neighborhood in nyc was polish and italian
which meant that on my block the polish store made their sausages
the italian store made their sausages
they both made the sausages in the back
both stores invited my dog in and fed them titbits of tasty cold cuts
joey, the owner of my italian sausage store, married polish wife
(had beautiful kids)
he told me he also knows how to make kelbasa now
and if he had right machine, he could make kelbasa in back too

I looked up kielbasa sausage and found this one made of turkey. From other sites, it seems that the kielbasa is in fact made from lean cuts of pork and sometimes veal is added in.

I must look for this on our next sausage occasion.
