The yogurt you eat now is fermented with bacteria that originally came from a cow or goats digestive track...there is only one outlet of said digestive track yeah it’s like that. These researchers point out that after the initial batch is fermented you can isolate the desired species extract them and cultivate them in clean bioreactors for subsequent use.

They point out that historically ant were the starter culture , so was leaves, and yup dung << this is the source of all modern industrial yogurt fermentation strains now propagated via controlled fermentation.

Humans have been fermenting things for 10,000 years by accident or on purpose and every one of them needs a starter colony that had to live on or in something before it was transferred.
