Everything makes perfect sense to me!
Humans continue to evolve. Dog breeds continue to expand. Does it amaze you how many different dog breeds have been created by humans from the original species by selective breeding? Evolution happens in nature by survival of the fittest who can adapt to existing environments.

It does not amaze me, but it does not prove evolution at all. In fact, it kind of disproves evolution. As you breed dogs and create different versions of dogs you lose DNA information for things like their height or nose length. You can take DNA information away from a wolf to create a Chihuahua, but you cannot add information to go back to a wolf. You cannot add information to create a new type of animal either. A dog will give birth to a dog and will not reproduce with a horse to create something new for example.

“adapt to existing environments”

So you are telling me that you adapted to the environment where you live and did not choose where you live for the environment that fits your needs? If you move to the North Pole, will you grow fur or something to keep you warm?
