Yep, no worse than many sausages and ground meats. Store bought Chorizo is great stuff and it is mostly Lymph Glands...

I use those Niboshi (煮干し), from the Asian mart, little dried fish for stock. Makes a good stock, fish sauce from Thailand (Trang province) is hearty, Vietnam fish sauce is good too, but I know the Trang province from my youth.
I’ve been making chili oil too. Not as filtered as the store bought but pretty good. Tabasco is about the scofield limit these days. The next pep down is cayenne.
