Had a mild case recently that I attributed to the pico de gallo I got from Wally World and out in my special chicken salad. The cilentro in the pico looked wilted and soggy but I only dsicovered that aspect after having put half of the conatiner contents into the chicken salad. I make burritos with the mix ... well, I used to, I am stopping buying their pico. I will make my own from fresh, washed, onions, tomatoes, peppers, cilentro and lime juice.
My rule is if something happens that MIGHT spoil the food, throw it out.
It’s not even worth the worrying that you will do about whether it was okay to eat it, not to mention the real sickness that can occur.
