I love eggplant and artichokes on pizza. Green peppers would be my least liked topping.

I love them also but not on a Pizza. It simply is not a Pizza (except in name perhaps) with those things on it.
Pizza toppings are
Sausage, Pepperoni, Meatballs, Onions, Garlic, Anchovies, and maybe Olives if they are black. Anything else just turns it into some kind of a yuppie conglomeration.

Artichoke hearts, sun dried tomatoes, and red onions are great together on a pizza.
Roasted red peppers are great on a pizza.
Just the thought of eggplants, or artichokes on pizza makes me gag. But my grandmother who was a weird vegetable connoisseur after living through the depression would have agreed with you. Although she loved the addition of green peppers to any dish.
Alcoholics love cured anchovies on pizza because they have been soaked in salt for months and their damaged taste buds need lots of stimulation.
