With Parler you can’t choose your name? Part of your email is your name? That’s icky.

You can choose your name on Parler. You set up your account and then go to your settings to change your screen name. At least, that is what I did.

I tried to change my name but was having some trouble so decided to delete and try again. Noticed just before deleting account that they warned me there was no going back. Didn't take it serious. Its been two days and just now tried again to create account. They verify my email. So they got my email and phone number and have me tagged for lock out. Dirty dogs. They don't notify me that I'm locked out but set me up to always fail the captcha process.

So, like twitter there is your screen name, and your @name, and your @name is the first part of your email address, hmmm.

Simple solution...

get a free email account at mail.com — It’s reliable, I’ve used it for many years as an alias email.

Create any email name you want and use it to sign up, and only the name you choose is shown on Parler [and it doesn’t include the mail provider’s actual domain i.e. mail.com]

Go into profile/settings(little nut)/profile and you can pick a name. Grope around a bit and you’ll figure it out. It’s just change and change usually sucks.
