Ive heard the taste of Moringa described as being peppery like arugula. You could juice the young Moringa leaves with sweet fruit to balance the taste. Or use as you use parsley to garnish foods. The very young pods are eaten like string beans.
The tree would be a pretty good replacement for meat and vegetables during a shutdown. Its a complete protein.
Supposedly the seeds can also be used to purify water or sanitize hands!
All in all, it might be great for prepping for someone who doesnt have the space or time to manage a victory garden.
Young tender leaves may taste better; I just grabbed a branch I could reach. Parboiling and then cooking might get some of the bitter out.
