My next dig is this time period, from the fall of the Roman Empire up to a given reasonable point, not sure what that end point is. I want to break it up into reasonable chunks.

Sounds like a good plan. It’s also worth noting that ‘fall of the Roman Empire” is not as clear cut as a lot of people think. For one thing, the empire had already been split into an eastern half and a western half. When people talk of the fall of the Roman Empire, they’re referring to the fall of the Western Empire.
The Eastern empire centered in Constantinople remained intact and was known as the Byzantine Empire. It survived till the Ottoman Turks conquered Constantinople in 1453.
On top of that the Western Empire had been in a gradual decline and transformation for over a century prior to 476 A.D., the date usually given as its end date. Some aspects of Roman administration remained even after this date. But control of the West had already become fragmented even before 476 A.D. with most of the recent emperors having been weak and little more than figure heads.
