Do you happen to remember who this was? Because I have seen a number of studies that have indicated the opposite, or that this effect that you describe is only true for people with seriously compromised digestive systems, or for people with destroyed gut flora.

These things are almost impossible to study in a truly scientific way, so any particular study has to be viewed with a huge amount of salt. But I would like to see how he came to his conclusions.

Raw vegetables are dramatically low in calories and we probably only absorb about 50 calories a pound from raw vegetables. Our caloric needs cannot be met on a raw food diet without consuming large amounts of fruits, avocado, nuts and seeds.

Read the book, Catching Fire, How Cooking made us Human.

Raw food diets are fine if you do not need to exert yourself to find food and you do not need to exert a great deal of energy in your work and you take supplements.

People who are on raw food diets lose weight because they are not getting the same calories and nutrients from the food they are consuming.

While this is fine if the three conditions mentioned above are met if they are not you will eventually starve to death.
