It’s just My Wife and I now so we are looking for a good Easter Brunch after Church on Sunday. Then I will check on my 2 new Bee Hives Sunday Afternoon.

Work. Friday 8-midnight. Saturday 8-4, color eggs. Sunday 8-midnight, kids will be up by 6 so it’s not that bad..

This afternoon (Thursday)I am joining my parish priest and several others to joint of lamb, new potatoes, green beans, dinner rolls, etc.

Tomorrow (Friday) fasting

Sunday - Baked ham, ham pie, sweet potatoes, succotash, baked beans, cranberry sauce, deviled eggs, mashed whipped potatoes.

For Good Friday, I’m having split-pea soup with vegetables. I just got it out of the freezer; the note on the bag says it originated on March 25.

It is also my mom’s 80th birthday and since my dad has Parkinson’s and can’t leave the ranch, we’re having an authentic chuck wagon (from the 1800’s) cook a supper from scratch for the whole family of 50+ people in the pasture behind the house. Chicken fried steak, beans, potatoes, peach cobbler, etc. Then an Easter egg hunt the next day. It is also my mom and dad’s 60th wedding anniversary. I don’t expect he’ll be with us next year, but I have been fearing the same for a couple of years now. Have to make the most of the time we have left with them.

My son and his family are coming to our house. Everyone’s favorite “special” dinner is turkey, yams, mashed potatoes, carrots, something or other in the green veggie category (salad, sweet peas or green beans), punch with white grape juice concentrate and ginger ale. My grandson is wearing braces, so we’ll probably have pineapple upside down cake (his favorite) instead of pecan pie (my favorite). And, of course, deviled eggs. He likes to help make them - we put the yolks, Miracle White, mustard and a little bit of juice from a jar of my daughter’s bread-and-butter pickles into a zip lock bag. Then he mashes until they’re well mixed, we cut a corner off of the bag, and squeeze into the egg white halves. Sometimes we sprinkle with paprika, sometimes not.

Honey baked ham. Hopefully enough for leftovers (HA!!) for sandwiches for later in the week. My brother and I will fight over the bone for split-pea soup.

We’ll also have asparagus (I live in California and it is now coming in), a green salad, cut up fresh fruit, “happy hour” before dinner (usually raw veggies and dips but chips for the kids), home-made crescent rolls, NOT from one of those pop containers, and for dessert, most likely a coconut cake.

Can’t wait!!

That looks like the ham my grandmother used to bake!! — Even the dishes look familiar.

We ate like that every Sunday after church when my grandparents were still alive...I miss it so...

Today through Saturday night, pulling three 14-hour shifts in a booth at a conference. Sunday will be spent recuperating. Back to work on Monday.

My daughter's school (private Catholic) is putting on a "Living Stations of the Cross," so I'm taking vacation from work to attend that.

Tomorrow is also our wedding anniversary, but we'll end up celebrating on Saturday evening...already have some reservations, and will look forward to a good meal and the company of my wife.

Sunday, we'll attend Mass in the morning, and then my in-laws are stopping by for a traditional dinner fare.
