I have always liked rice, beans and potatos all my life and have always cooked plenty of all three. Plus, we cook way too much food for us at one time anytime we cook. It saves on utility bills, plus we like leftovers, and many things are better the second time.

I’ve done goulash with tomatoes, too. I like pasta, rice, bean and potato dishes too.

Sorry to hear that times are so tight right now. The good thing is the above are relatively inexpensive and they are versatile.

I use document protectors w/a binder. That makes it easy to categorize and store. You can buy them in bulk at the warehouse stores.

I know I’m late to this thread but this dish is a TNT favorite that my kids ask for!

Kate’s Tuna Casserole

Serving Size : 6 Preparation Time :0:45

1 1/2 Cups Rice,White,Enriched,Raw
6 Ounces Tuna,Canned In Water,Solid White,Drained
10 1/2 Ounces Cream of Mushroom Soup, Canned
2 Tablespoons Pimientos,Canned,Chopped
1 Tablespoon Parsley,Fresh,Chopped
1/2 Cup Mayonnaise
1 Teaspoon Lemon Juice,Fresh
1 Teaspoon Salt
1/4 Teaspoon Pepper,Black
1 Cup Cheddar Cheese,Shredded
1 Cup Potato Chips — Crushed
1 Teaspoon Onion Powder

Cook rice in 3 cups salted water for 20 minutes.
Combine in a greased 2-quart casserole, tuna, (drained)
soup, mayonnaise, pimento, parsley, salt,pepper and onion powder and lemon juice. Stir in grated cheese. Add cooked rice. Cover with crushed chips. Bake in a 350-degree oven for 30 minutes.

Thanks. That sounds like something a little different than the norm by using rice instead of noodles. I think I’ll try that the next time I make a casserole with tuna!

Make sure the flour gets nice and brown, add a little butter, brown the onions, too, before you start braising.

We had the same recipe but with mushroom soup. As newlyweds it was a frequent Fri night meal. I have not made it in years and don’t care if I never have it again.

This was another cheap Friday night special I made as a newly- wed and later as a young mother. My children loved it. I got the recipe from a lady whose children I babysat when I was a teen.

One of my favorite sandwiches is shrimp, crab, or salmon salad on top of a toasted english muffin and topped with a slice of cheddar cheese that is melted under the broiler.

Tuna melts were another cheap Fri night meal in my newly wed, young motherhood days.
