If you get a chance, watch ‘The Making of Jaws’ on the Bio channel. Absolutely fascinating.
Everything that could go wrong on the Martha's Vineyard setting, did go wrong- the fake shark malfunctioned, a boat with all the actors and equipment and film sank..
Spielberg was threatened every day by the studio with being fired for going over budget.
There was no script. It was written daily by the writers AND the actors.
Yet it all came together to become a phenomenon that will never be replicated lighting in a bottle.

Coppola went though similar things with Apocalypse Now. There is a documentary called Hearts of Darkness: A Filmmakers Apocalypse that details this.
