Ok, I’m sure she’s a wonderful dog, but do you have AKC papers that specifically say “Staffordshire Bull Terrier” and not “American Staffordshire Terrier”? SBT females only weigh from 24 to 34 pounds and are only 14 to 16 inches high at the shoulders. The 28 pound dog I saw was 14 to 15 inches high. She was a small dog especially when compared to what people normally think of as a pit bull.

Amstaff females weigh proportionately more and are 17 to 19 inches high at the shoulder.

You are correct, she is a American Staffordshire Terrier not a Staffordshire Bull Terrier. You know your dogs.
