Just about anything electronic can be recovered, if you get the right forensic experts. That depends on how the machines were wiped. Using a DOD 5220.22-M utility which is freely and easily available on the internet makes any Windows/Linux/MacOS hard drive unrecoverable.

And have enough time...and money.
Usually you get pieces, but you can get more pieces with more time and money. At a point though, it becomes impractical.
Regardless, they have enough that it certainly looks like deliberate destruction of subpoenaed records.
