There’s nothing wrong with that. You’re right to ask the question. If you think about it though, people have just lost meat. A lot of them will naturally crave something that is going to fill in that gap, they’ll naturally want something meat-like.

Yea true. I mean I don't see the point in doing it in the first place (except for the rare medical issue), but some people are gonna do weird stuff. But for most people switching from meat, it's relatively easy to cook meals that are hearty and filling without needing a fake-meat part. Lots of soups use beans/barley/lentils, and can be hard to even tell/taste the difference if they have bits of sausage or not. Sure, you can;t really do a burger or meatloaf without a fake meat, but there's plenty of other foods that still function very similar with or without meat.
