Next time, they should just use one of the menus suggested by Michelle my bell for America’s school kids. They won’t need to prepare too much since all the attendees will probably leave and go find someplace for burgers or ribs.

Do yourself a favor and make some cornbread (Jiffy has a small box that’s super easy to use to make some muffins). Cover them with butter or syrup or be creative - you’ll become a fan.

I think the menu sounds great - did she also see to it that whites were banned from the cafeteria that day, since it was a “black” menu?

Correct! Southern cooking is an amalgam of black and white cuisine. We eat what tastes good and do not give a damn who cooks it.
Near my VA Hospital where I worked a black gentleman had a fried catfish stand. Customers black and white lined up to buy his great fare. Catfish, Cole Slaw, French Fries and Black Eye Peas. It was and is good!
At the VA we also had black history week. Great food was prepared mostly by black cooks. We lined up to eat it. This political correctness is insane.
Fresh Black Eyes in the husk, cut, saute with bacon and onion lightly, add water and spices and cook until tender. It is great.
I remember a few years ago, some school made fried chicken and waffles and was forced to apologize.
