I thought that the alcohol in the gas was supposed to produce less carbon.

There are all kinds of chemistries that go on when the alcohol interacts with the alloys in the carbs. Take a look at a float bowl sometime and you will see all kinds of green and gray ick coating everything. And older rubber gaskets and seals decompose.
