The article alleges the names on the list are “cover names”, not their real names. Who in their right mind would pick an obviously jewish name as cover when they are going to do covert ops in a muslim country?

Good question. Am thinking the issue is not necessarily the name, but *ease of entry* to a country.
In the past, Mossad agents (15 of them) had used fake Australian passports (2010) to enter Dubai, because tourist visas for Australian nationals are provided on arrival. According to Dubai immigration, they had much knowledge about Australia and passed themselves easily as Australians.
The same can be said about Mossad agents entering NZ (2004) with forged NZ passports. Ease of entry, no visa requirement.

Actually, with an Israeli passport, you can’t even enter Syria, not officially. Given the ongoing war, one can argue Syrian border control (depending on how & from where these people entered to begin with) was not as robust or controlled by the Syrian govt as it should be.

None of the mentioned and alleged countries have so far objected to or protested Syria’s claim.
I’m pretty sure the alleged countries can verify if those arrested are in fact their nationals. Most likely, it won’t be done publicly. Besides, even in the Arabic speaking world, there are distinct differences between dialects and accents; for example, Saudi, Egyptian, Syrian, Moroccan Arabic.
The Syrian Ambassador to the UN has fallen for a hoax news story. These stories are invented by die-hard conspiracy theorists for all manner of reasons. They did the same back in September with the claimed Russian cruise missile strike on an Aleppo Bunker that reportedly killed dozens of US, Israeli and other foreign agents. It is a mindset.
The Syrian Ambassador simply fell for this fabricated story and even read out he names at a UN press conference. This is the same Syrian Ambassador that tried to pass of a picture at a UN session in December claiming it was a Syrian soldier helping a resident of Aleppo. The image was from Fallujah, Iraq earlier this year.

This was the September story about the claimed bunker strike. It is simply fabricated non-sense.
