Popeye’s is real good but the pressure frying that KFC uses makes their chicken more tender and juicier and, thus, a little better, IMO. although sometimes I crave the Popeye’s brand. I am pretty fond of my own fried chicken though actually. I will dust the chicken in the spice blend (red pepper, black pepper, white pepper, cayenne pepper, salt, thyme, oregano,, rosemarry, before I coat it with egg and then the flour/spice mixture and then deep fry. I like to fry nothing but thighs which I normally debone first. The bones get turned into stock for gravy or whatever. The fat that settles to the top of the stock normally gets used for making a roux which I typically use to make a veloute’ which I then use to thicken up chicken stew which is out of this world good, especially when served with fresh buttermilk biscuits or when served in a puff pastry shell.

Yes, just a tiny amount of msg gives me brutal migraines too. I avoid anything that might have it in. I thus can’t eat any broths or soups not made from scratch by myself, no crackers, no salty snacks (a very few are ok).
Actually, KFC’s is “broasted”, meaning deep fried under high pressure. But properly prepared deep fried food is not at all greasy.

Hmm. I wonder why nobody has ever been able to replicate that effect? Perhaps it was some other ingredient, or an extreme overdose of MSG.

Haven’t seen a Roy Rogers round Dallas for years. They must have abandoned this area. Not tried 5 Guys as yet but do see their establishment as I frequently pass by. An old favorite was Hardee’s and not certain that they might still be somewhere nearby any longer.
You can tell he’s an expert. He has the gravy keeping warm on top of the mashed potatoes, and the paper napkins under the fried chicken catching grease. But there’s more! He has one plate underneath to stop his knife cutting all the way through to the table, plus a napkin between to hold it steady. Behold evidence of his genius with these things. No wonder Prince wrote a song about him.
Here is what I have been told, is the original KFC biscuit recipe:
2 cups all-purpose flour
1/4 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons butter
3/4 cup buttermilk
Instructions:
Preheat oven to 450 degrees F.
Sift the dry ingredients in a large bowl and cut in the butter with a pastry cutter or with two knives until a coarse meal texture is obtained.
Add buttermilk and knead lightly but thoroughly. The dough should be soft but not sticky. If it is, add a little more flour.
Knead for 1 minute, wrap in foil or wax paper and refrigerate for at least 20 minutes.
Roll out the dough to 1/2 inch thick on a lightly floured surface and cut with a biscuit cutter. If you dont have one, a drinking glass of the desired diameter will work.
Transfer biscuits to a dark baking sheet and bake until golden brown, about 10 to 12 minutes.
KFC Slaw Recipe:
Chop 1/2 cabbage, a small onion, and one carrot in a food processor in batches and put in a bowl.
Make this dressing:
1/2 cup sugar
1/4 cup veg oil
1/4 cup vinegar
Blend well in a food processor, then add 1 cup mayonnaise and process for a minute or two. Add to the chopped vegetables.
Let mixture stay in the refrigerator overnight. It will be ready the next day.
Tastes just like the real thing.

Too much of anything is bad for you, but MSG is not (despite being referred to by its chemical abbreviation) some artificial laboratory concoction.
Msg made my feet swell so bad my feet couldn’t fit my shoes for a day.
My dad used to make the best fried chicken I’ve ever had. He used a pressure cooker and a special batter that included baking powder, (we think) and Lawrey’s seasoned salt. Yum. We tried to duplicate it when he was in his 90’s, but by then he’d forgotten what his special recipe was back in the 1960’s and ‘70’s.
MSG gives me a headache. Sodium nitrite gives me wierd dreams. Grass-fed rib eye makes me smile.
5 Guys is way better than In n Out. In n Out was good 40 years ago - today it’s awful
KFC needs to be pressure cooked in order to taste right, that is how it does not taste greasy.
My mom used to make Maryland Fried Chicken which was awesome.
Before she passed on, I learned a few of her recipes...beef stew, apple pie, Portugese Kale soup, but the one I regret never learning from her was her Maryland Fried chicken.
And it wasn’t ever greasy.
And by the way, I am with you on the MSG...but I don’t rule out some people having issues with it. I think it is the quantity.
