A big fat surprise for dietary dogma

It turns out that for most people, the cholesterol in the food you eat has little or no connection to the cholesterol in your blood, or to heart disease either. “There’s never been a single study that showed higher egg consumption is related to higher risk of heart disease,” Walter Willett, a nutrition scientist at the Harvard School of Public Health, told New York Magazine recently.

Last month, in an epic climbdown, the U.S. Dietary Guidelines Advice Committee, whose guidelines influence millions of people, finally dropped its recommendation to restrict cholesterol. “Cholesterol is not a nutrient of concern for overconsumption,” it said. So go ahead – eat all the eggs you want.

I never stopped buying eggs. I buy them from an Amish farmer and they are free range. In the spring when they get into good spring grass the yolks become a rich golden orange color. Extra large eggs for $1.50/dozen!

When the bacon looks like that - all bubbling and foamy - that’s the time to drizzle a little maple syrup of the strips. Continue frying till done and dig in. Let the pan cool before you lick the skillet, though.

My cholesterol should be through the roof. When I was in high school my favorite lunch was either my Mom’s homemade chopped chicken liver or schmaltz on white bread. Schmaltz is rendered chicken fat. A Saturday favorite was fried salami sandwiches.
Times have changed, my go to lunch is now half an avocado spread on a piece of whole wheat bread.

When I switched from potato chips to raw carrots in my daily work lunches, I definitely became more orange skin toned.

I saw a young man at the checkout at Wal-Mart, he had a cart full of carrots, he also set my gaydar to pinging.

First orange queer I've ever seen.

I keep a tub of bacon fat around for seasoning just about anything/everything that hits a skillet...natural butter as well...

Eggs are scrambled/fried in bacon fat with butter...

Looks like it’s gonna be breakfast for dinner tonight...

wait a sec!
Weren’t eggs in the news a few months ago? something about the price of eggs will skyrocket because of blah blah blah ( I forget the reason)
So now they’re pushing eggs?!!!

Meanwhile I am glad that I have three elderly chickens who still lay eggs. I get an egg a day. Yup it’s a group effort for the old ladies. God bless them!
