Because hiring a lot of people to put out more studies on how the PC lifestyle is superior and healthier is cheaper than actual medical research, you can manipulate data to fit the political objective, hire more people to do social studies and thus boost crony employment and not actually put anyone at risk like trekking through a hospital and possibly catching a disease.
