Job security, is my guess

A 1000 lb beef or two 500 pounders ... that's the (basic) question.

Seems to me the 1000 would probably eat a bit less than two 500's, require a little less space and accomplish the 'task' of being butchered in a little less time.

(All the above just a guess)

Let's take that 1000 pounder one step further ~ on the day it reaches 1000 pounds specially bred bio-sensor organs generate an electric current in a pad of flesh on the side which can be readily detected by remote equipment ~ which in turn signal the mobile butchering vans to go out and slaughter the steer.

The meat is immediately chilled, and other parts are set aside for later use.

What's not to like?
