Reminds me of a story from my uncle (supposedly true) about eating at a restaurant in some small town. He was by himself and had a meal that came with several sides including cottage cheese. When he was done, he ate the lettuce that the cottage cheese was on.
The table was cleared and as he was waiting for the check he overheard a young staffer (possibly a daughter of the owners) say with shock/sadness "He ate the lettuce" (sort of like, "what are we gonna do"). Sounded like they were rinsing the lettuce and reusing it as a garnish.
