Cape buffalo and water buffalo are not the same thing. I don’t think anyone’s ever milked a Cape Buffalo, and lived to tell of it.

If you ever get a chance to get some real buffalo mozzarella, do it! It is wonderful, wonderful stuff. Much creamier and softer than what we are used to.
There’s an Italian deli I like to go to where the owner makes fresh Mozzarella from water buffalo milk.
The Boccaccini are incredible.
There is also a Mediterranean water buffalo found in Italy and other subspecies of water buffalo are found in Eastern Europe.
Mozzarella di bufala. It’s the best, but only if you are eating it freshly made in Italy.
