I tried vinegar ribs when visiting Raleigh, NC. It’s a local staple out there, but I couldn’t stomach it.

I’ve lived in NC all my life and have never heard of “vinegar ribs.” The Eastern NC pepper vinegar sauce is used on pulled pork.

Having been born and raised in Alabama, and lived in Texas for almost 40 years, I have to disagree about the Alabama listing.

Alabama is all about a good sliced pork sandwich, with tender meat and a crunchy ‘bark’ on the outside, also aptly as ‘outside meat’, and a tomato-based sauce.

When we first moved to Houston in 1978 and I ordered a sliced pork sandwich, they gave me ‘HAM’!

Yuck!

Utz has chips labeled as “Carolina BBQ”. They are fantastic (only wish they would put this flavor on thick or ripple chips). I’d call it “sweet & sour”...normal BBQ with extra vinegar bite.

I now think this is what my mother has been baking her chicken in all these years. It’s great.

OTOH, a local take-out (very famous for crabs) claims it’s basically Carolina BBQ. But it is NOTHING but vinegar. God awful. Don’t know how the BBQ wing keeps going. Must be carried by the crabs.

Just dousing it with vinegar isn’t going to work. There’s an art to Eastern NC barbecue just as there is to every other variety. Calling it “Carolina BBQ” should have been the first clue, there’s at least four distinct styles in North and South Carolina.

As I’ve commented on other threads, the assault on fundamental human liberties here in this country may have already exceeded what people experienced in the old Soviet Union and in the Third Reich. And if not, it certainly won’t be long if Donald Trump does not win the coming election.

I was invited to a Korean cook out once.
They were already cooking the meat when I got there.
There was a nice bed of coals inside a box of cinderblocks with sliced meat on a door sized grill.
Two young fellas and one old man were doing the cooking.
The old fella had a gallon jar which appeared to hold his special seasoning.
Every once in a while he would reach his tongs in and grab a piece to taste.
He would chew his sample and add some seasoning.

The young fellas would grab the handles of the grill and shake it from side to side till the old man was satisfied then pop that grill up so the meat flew into the air.
They did that many times and barely lost any meat off the grill.

I don’t know who put on a better show, the cooks or the Korean singers who were in costume singing very old songs accompanied by flutes, cymbals and some type of guitar looking thing.

The meat was delicious!
I ate two plates with all types of vegetables.
I did steer clear of the kimchee though.

Those Koreans sure did know how to throw a mean cook out.

Can’t stand vinegar bbq sauce. It has to be a sweet and spicy tomato based sauce or nothing.

Those offended whiners better not ever try to mess with a Texas bbq.

Santa Maria, Calif. has a radically different concept of BBQ. Grilled tri-tip with garlic salt and pepper—no BBQ sauce—along with pinto beans and salsa on the side. <<

Really!!!....up here in Maine we celebrate our “native” spring BBQ with smelts and fiddle heads (do your own DD)

We're so sick of beans and rotten spiced tomatoes come spring, its a real treat...The best of both worlds for us...../s
