Well, two points about that:
1) Tolerance: the more you drink, the less it affects you. If she had a condition where she is effectively constantly drinking, then she should have some significant degree of alcohol tolerance that might allow her to function more normally than you would expect.
2) If she was suffering this condition all the time, then her capacity wasn’t diminished. That was her normal, daily capacity (at least until she started actually drinking).
