Delta smelt is a pretty fancy name for what looks like a common minnow. Of which there are probably billions and billions, so a few less in the ‘delta’ won’t matter much.

I just don't get the obsession with eco-nazis and their insistence that NO species should become extinct. Isn't it a fact that some 95% or more of all species that ever existed are now extinct? So what? The world kept turning and guess who rose to the top of the food chain?

Why should anyone give a crap about a minnow? What do they add to the betterment of the environment or mankind? Are there no other fish for bigger fish to eat or suck up algea? If the smelt were the livelihood of fishermen, there may be some point to this insanity, but the smelt is just a frigging minnow. Exactly who or what is benefitting from there existence?

To take the eco-nazis' arguement to it's logical conclusion, we shouldn't be trying to eradicate certain bacteria and viruses. After all, they are a species of life.

Yes, there is current balance in the food chain, but that has changed through time immorial. Some die off and some adapt like the precious spotted owl. They simply re-located when the trees were being cut down.

No, it's actually the bleeding-heart liberal government of California that AGREES with the EPA. California has even stricter environmental regulations than the Fedgov EPA. Think hippies in Sacramental and Bezerkeley. The idiots in Sacramento just passed laws to cut carbon emissions more than dictated by the EPA.

Our cost of gas continues to go up due to special blends and now the new tax to make California the cutting edge to fight "global warming". If it weren't for my Wife's obligation to her local Father, we'd be out of here. The "California Dream" has been long dead. I miss it.

Delta Smelt are easy and fun to catch, just the same, they are also easy to cook and eat! Using simple ingredients, you can prep some dishes sure to hold up your strength for the rest of the day.

Step 1: Clean

Scale and gut them for the prep. Heads may be left on.

How does one scale a fish? Hold it down on it's side, rub the back edge of your knife against the grain of the fish. This may take time and can throw about some scales, but it's part of the fun and process!

Gut it by cutting (w knife or scissor) from the bottom of the hill to the small opening just between the small fins located about 2/3s of the way toward the tail, and pulling the head up and downwards. The head and innards come out in a clean sweep, but this one-stepper can take some practice.

Step 2: Pan Fry

With some olive oil to coat the bottom of the shallow pan, drop in some of the Delta Smelt and let each side cook for about 3-5 minutes depending on your heat level and preference.

You can season the fish (before they hit the pan) salt, pepper, garlic powder, lime salt -really, anything you like!

No, a sample from a dung heap is evidence of endemism, unless there is fraud involved, which given the players involved (especially Peter Moyle) is entirely possible.
