Meat industry to reboot labels to help consumers

Don't know your pork butts from your rump roasts? It may be getting a little easier.

The American meat industry is rolling out a refresh of the often confusing 40-year-old system used for naming the various cuts of beef, pork, lamb and veal. That's because the system -- the Uniform Retail Meat Identification Standards, or URMIS -- was designed more for the needs of retailers and butchers than for the convenience of harried shoppers more familiar with Shake 'n Bake than boneless shank cuts.

It may sound cynical, but usually these "great renamings" are accompanied by a price increase. Your $3.49/pound pork butt will be replaced with a $4.99 Boston roast.

Exactly. Those who would resist paying more for plain old bone-in pork chops will find that resistance slipping they encounter the tony-sounding Porterhouse Chop. At least that’s the theory.

Porterhouse chop?...otherwise known as a loin chop. Well it is half shell with a piece of the fillet.
