I grew up on a cattle ranch. What do want to know? I’m not familiar with a Scottish Highland steer, but if you want good meat, an ordinary Angus or Hereford, are more than adequate.
You mention about having your own beef supply within a couple of years, I hope you weren’t thinking of using a steer for breeding.
