I took it that Tony was burned out!

Surprised they'd be using junk while working in a top kitchen though.

BTW, no problem with him advocating on behalf of the hispanic chefs ~ there are quite a few of them ~ many of them moved into major kitchens after extensive stints onboard cruise ships.

At the same time you have to remember that as long as there are rich people they should be able to get visas.

Same here. Can't say it surprises me though. His show persona is that of a person completely convinced of their own "hipness".

You would be amazed at what happens before and after the rush. And if someone can't function during the rush, they are gone. So it's high-functioning druggies, alkys, queers and pervs until they burn themselves out (not all, but lots).

Tony is burned out and over the hill.

He needs to have a big cup of STFU and go back to charging owners of dying restaurants for a few months of hope that he can turn it around. That was his primary scan for years.

The only thing he DOES have reservations with is “very angry white people”?? He fails to realize that those are the very people who would stand side by side with him to fight for his right to smoke. And drink. And say what’s on his mind. Hey Anthony! You’re dogging the wrong people.

I read Bourdain’s book, “Kitchen Confidential” and found it to be enjoyable. It is unfortunate that his political views don’t line up with mine, but I will continue to watch his show.

Yeah, shut up and cook.

But you’re right on about the kitchen being like the chaos of war. In fact the kitchen staff develops a camaraderie that’s probably pretty similar to a platoon. It’s very close knit. I don’t know how people manage to sustain a career doing that stuff. Every day (or night really) is so crazy and so stressful, but they do it day after day. It takes a certain personality that thrives on chaos. I think there’s some escapism involved too. The dinner rush doesn’t let you think about anything except the dinner rush. There really is no outside world or other life when you’re in the thick of it.

According to Bourdain, the most disgusting thing he has ever eaten is a Chicken McNugget, though he has also declared that the unwashed warthog rectum he ate in Namibia and the fermented shark he ate in Iceland are among “the worst meals of his life.”

Bourdain is well within my range of watchability. The worst part is his shows have become too formulaic.... especially with his voice over summation at the end. He seems bored with the format. He’s running out of places to go for their food and culture

Look, Tony gets to go into the kitchens. I can filter out his political stuff. Even his competitors don't get deep into the kitchen ~ if at all.

Not that I want to be a cook or chef, but fur shur I want to see how those guys usually put this stuff together. I'm trying to avoid wheat gluten at all costs. When Tony or his restaurant guy says "flour" my ears move into the proper position to get all of the sounds.
