Banquet for Louis XIV recreated at the Palace of Versailles

Twenty or more not-so-dainty dishes would have been a typical evening repast for Louis XIV of France. To celebrate a show of the Sun King's art collection at the Palace of Versailles, one chef worked for a year to stage a recreation of a royal belt-buster.

FIRST SERVICE

Royal ballotine of pheasant

Petit pâté en croûte à la bourgeoise

Fresh deep-sea oysters

Lobster aspic chaud-froid

Beef madrilène with gold leaf spangles

Pureed chestnut soup with truffles from the Court of Italy

Bisque of shellfish from our coasts with a boletus infusion

Pumpkin soup, fresh from the royal vegetable garden

Scallops with oyster liquor

Wild duck cromesquis à la Villeroy

Hosting a historic meal for 40 is one thing, holding it in France’s most prized palace is another. 'We decided to recreate the Sun King’s Table at Versailles as a tribute to the cultural heritage that witnessed the birth of both champagne and luxury,’ said Richard Geoffroy, Chef de Cave – the chief wine­maker – of the champagne house Dom Pérignon. 'This is the first time anything like this has happened, and it probably won’t happen again.’

Moët Hennessy, which owns Dom Pérignon, is sponsoring an exhibition at Versailles – 'Louis XIV: The Man and the King’ – showing more than 300 of the lavish works of art he commissioned during his 72-year reign, some of which have not been seen since the 1789 Revolution. how in the world did they eat a meal like that..do you just get a small portion..or just select one or two items from the service

I've had several French dinners like this, they last about six hours.

what’s with the hard boiled egg..seems a little odd with such other fancy items. Do they fancy it up or is it just an egg in a dish or an egg stand?

I don’t recall ever having one with egg. But you will notice that the salad come after the meal and before the dessert, this is to aid the digestion.

do you sit at the table for the whole six hours..or do you get up and go to a drawing room and then come back???

I can’t imagine sitting at a table for 6 hours eating all of that.

Yep. It's not fast food.

Longest meal I've served was a 5 course meal that lasted about 4 hours.

You have to turn to Escoffier for inspiration for one like that.

No, but gold and silver foil were readily available. Gold and silver can be pounded into foils thinner than paper and are edible. They are often used to decorate dishes such as the Beef madrilène with gold leaf spangles.

They didn't line pans with it. ;)
