OK, I've got a mass spec and a gas chromatograph here where I am too. Email me the data you got and your protocol and we'll see if it's reproducible. I'm just the computer guy but the scientist who is sort of my partner in coffee crime will get a kick out of it, I think.

"I can't drink it past 7:00 pm or I'll be up all night"

I can drink a 12 cup pot of coffee and lay down and i'll be asleep within 5 minutes, even when i'm trying to stay awake and watch something on TV!

I used to think there is no snob like a wine snob, until I met coffee snobs.

I used to work saturdays doin overtime in the shop refurbing copiers and fax machines in the 80's. Everyone brought a bottle of wine, deli, greek olives, good crusty bread and we drank all day.

These draconian actions against enjoying life are just unrealistic. Life is to be enjoyed, not litigated or spent worrying about what you ingest or consume.

I think the reason your lips get all tingly from drinking espresso is because of all the VOC's that don't cook off since it's produced so quickly and the isoflavanoids that are in espresso too. Perking or dripping your brew burns off those complex compounds.

customers are habituated to a drug, albeit one legal and relatively harmless.

Oh, no.  Don't show this to Ashcroft, or it won't be legal long.

The best tasting (and incidentally, the highest caffeine) is from soaked coffee. If the fine ground coffee is soaked for at least 12 hours (up to 24) and then strained out, it is very tasty but doesn't have some acids since they are released by heat. If the coffee is made super strong, hot water can then be added. I used to make it that way in the summer, and add cold milk and ice cubes.

Once people try it, they really like it. It's easier on the stomach.

I try to avoid drinking coffee now though, makes me nervous.
