I just cut off the visibly moldy parts and eat it. My wife thinks this is crazy and throws it away. If the mold does not taste offensive, I eat it with the cheese. Otherwise I trim it off. Never been sickened from it yet.

According to what I have read, if the cheese is hard, it is safe to remove the moldy part and eat the rest.
But if it is soft (like brie/camembert), you should throw it all away, as it can kill you

I love bleu cheeses, but since my transplant I am not allowed to eat them, because of the medication I take for anti-rejection. A small price to pay, I guess.
