That the plane continued "flying" for some time is a testament to the robustness of its fly-by-wire system.

It could also be that with the reduced weight of the canopy, ejection seat, and pilot, the aircraft could then maintain altitude?

There have been other cases over the years of aircraft continuing to fly after the pilot ejected because of reduced weight.
