LOL! That sounds like the places in America that I’ve been to.
But again, it may have been the conditions or the company.
The first time, I was sick with the flu, and told my husband to take me anywhere that had hot soup.
The second time was with a gabby woman who wouldn’t shut up about her personal problems and just eat the food.
(What did you think of Bánh mì?)
I like pho, especially with prawn and pork belly fresh spring rolls.
But real Tonketsu ramen with pork belly is something out of this world.

My wife loves Thai food but gets the same symptoms as your niece. Turns out later she’s allergic to all seafood.
Fish sauce Nuoc Mam or Nam Pla is in everything.
I’ve been mostly able to substitute for oyster sauce and delete shrimp paste, but you can’t get around the umami of the fish sauce.
We’ve known for millennia how to grill meat, too; but regional differences make ALL the difference.
(I’ve never found sesame or ginger - or even wonderfully hot peppers - in the Italian soups you posted :-)
Me, too, love it! Have NEVER had a bad dish at a Vietnamese restaurant. Not too adventurous with my food though, so I stick to the restaurant guides. Very mouth-watering food, yum!
I read an article 20 years ago about the most popular street restaurant in Hanoi (at least I think it was Hanoi). Have always wanted to go. Can't remember its name now.
All anyone has to do is Google 'most famous restaurants in Vietnam' to see lots and lots of pics of some pretty appetizing food.

Your’s may have had Cilantro in amongst the noodles.
Cilantro can taste like soap, or as I describe it, “lettuce that someone has chewed up, swallowed, vomited up and then FORCED down my throat.”
Yes, that is exactly the way Cilanto tastes to my reckoning.
Remove it from ANY recipe and the recipe becomes an entirely new and wonderful dish. The What Da Pho restaurant I go to is very aware of my dislike of Cilantro. I will destroy the food on the plate, send it back and request a new serving if they mistakenly put Cilantro in any of the food.
Yuck.
P.S. My beloved husband reacts the same way to both Cilantro and Creamed Cheese. I never fully grasped his dislike for Creamed Cheese until I tasted Cilantro!!

To my ear, it rhymes with 'ma' and 'pa.' But maybe that's just a regional thing. No one's ever laughed at me, but you better go with the official pronunciation.
Hope you really enjoy your Pho, so much so that it becomes a regular part of your diet! I think it's delicious.
I love Cilantro! in either Mexican or Asian dishes. It doesn’t taste like soap to me, and the only time I’ve disliked it is when they’ve put it on bread sandwiches in the way one would use lettuce...
I just didn’t like something else that was - or was not - in the pho.
In fact, my main memory of both experiences is that there wasn’t really any pronounced flavor at all!
Again, I may have gone to lousy places...
I checked the menu of a local place and there it was — the fourth item on the menu. Hope to head over there soon.

Oh, agreed. Best bbq I ever had was in Tyler, Texas, and second best was in Tuscaloosa, Alabama. Korean bulgogi is still pretty dang good, though, whereever you can get it!
Pho is a really deeply flavored broth with veggies for colour.

If it’s done correctly it can become a person’s Comfort Soup.
There are places where inferior spices are used and that will make a world of difference.
My mom and Mrs POF are not adventurous at all. Our kids are very adventurous having been raised in the real multicultural area of Silicon Valley. We have amazing food from all over the world everywhere around here.
