If I remember right, our school lunches were 35 cents. You could buy a 10 meal punch ticket and save a little.

Something I recall from elementary school. Two or three times a year the state of Florida would give the schools surplus orange juice. We could have all we wanted and it was premium quality.

My kids hated school lunch and instead would hold out for a snack or leftovers made by mom.
When I was in school in the Dark Ages, some of the basic food ingredients were supplied by the Department of Agriculture, in those days there were lots of price supports for various commodities. So it was sort of a common sense thing. We already paid for it, through our taxes, and got it back, albeit indirectly.
I will say our meals, while not gourmet, were not too bad. Filling, and nutritious, the lunchroom ladies (there were no males in those jobs as I recall) did a good job with what they had to work with. And that’s what it comes down to. Cooking for 800 is different than cooking for 8, it just is. And they had to meet certain caloric and nutritional guidelines. I remember peanut butter sandwiches coupled with tomato soup, a combo I still enjoy today. Square, heavy pizza. Peanut butter cookies, peanut butter bars. Now peanut butter is probably banned. This is unfortunate because it is fairly high in some nutrients, and has 90 calories per tablespoon.
Goulash, and soups, stews, etc. They did a good job, and the cost again, was heavily subsidized by the taxpayer. I’m not a “socialist” but I guess it was a reasonable answer to legacy 1930s era farm price supports.
I have no idea what they are doing in that pic. My first inclination is they should be audited, and checked for embezzlement. We saw this kind of thing now and then in the Army. A mess hall had a budget just like anybody else. Start getting crooks in the mix, they would sell ingredients and staples on the side. Towards the end of the month, the pickins would get really slim in the chow line, and some Colonel who took his job seriously would show up unannounced to see how the enlisted boys are getting fed, start asking some questions, they’d get busted.
