Ode to Bacon

O thee I praise, and I sure ain’t fakin’
The fairest ether of carnal substance, our bacon!

That unctuous crunch so satisfying
I can already hear my fat cells sighing

Yea, about you there’s not one thing faulty
You make fried eggs so impeccably salty

A special treat from the Lord, yes I dig
Which is why he hid you inside a pig

Kindly don’t regard me a barbarian,
But you’re proof that God's no vegetarian

There is no shame in how I thee adore
I’d even pick you up after six seconds on the floor

Sweet minutes after, the glorious aftertaste lingers
Extra can be found on my greasy fingers

O dear Lord, may we never run out
Of the sweetest treat behind the muddy snout!

I was actually going to write something about Bacon Grease when I ran into this poem. When I was growing up the predominant cooking fat in the house was bacon grease. EVERYTHING was cooked with bacon grease, even popcorn. Mom would make fried tomatoes using red tomatoes instead of green and flour instead of corn meal. She would fry them in bacon grease until it was an unrecognizable salty-bacon flavored sludge. God in heaven it was delicious. It probably took six years off my lifespan. Oh well.

Oh yes, bacon!

When I was a kid, everything was cooked in lard.
Lard = Bacon Grease

Going so far as into the 80s the pork belly was bought and sold as a kitchen “swiss army knife” of sorts.

It was to eat, sure. But everyone knew it was the junk cut of meat. The pork tenderloin was what people were supposed to eat.

But yeah, we had the bucket of manteca on the farm. It was how we cooked. took way too much butter to for it to be effective in a lot of applications, but pork belly produced tons of fat that could be used to all purposes. Hell, I moisturized my car door rubber seals with it when I was a kid. We used to grease the hose before putting it away for the winter. We used lard for tons of things.

My wife and her siblings grew up on one of the great lakes. The would come home from the beach with tar on their feet. Their mother used bacon grease to clean the tar off.

I made basket weave taco shells out of bacon for a football party last season. They were a BIG hit!
Found the recipe and instructions on You Tube.

I have never heard of such a thing. Obviously I live a sheltered life. I see several instructional videos on youtube showing how to make them. It strikes me as a lot of work, is it?

Sometimes I crave a good ole BLT on toasted sourdough. I’m not a big fan of slobbering mayonnaise on sandwiches but it’s mandatory on the BLT.

The best way to cook bacon is in the oven.
1. Fill a sheet pan with bacon, single layer.
2. Place pan in COLD oven.
3. Set oven to bake at 400 degrees F.
4. Set timer to 20 minutes.
5. Remove pan, enjoy bacon.

It takes some time to do. I made a fixture to bake them in the oven and it shortened the fab. time a lot.
