The kapusta is probably so tough and leathery....you could make galoshes out of it. :)

But the dryer denser cabbage makes the best kapusta. I would love a couple of heads like that instead of the 8 or 9 I usually put up. The cabbage is shredded in case you didn’t know. kapusta = sauerkraut.

Well, depends. Mom called them “Golubtsi”. And wanted the most tender leaves for her spectacular Russian cabbage rolls. :)

Is that your mama? I get my tender leaves by putting them in with the shredded cabbage. They sour like the kapusta. In mid January when the crock is done I carefully take them out, fold up in packet, put in wide mouth jars, cover with brine and can them. When I do cabbage rolls I jut open a jar. The flavor with the sour leaves is delicious and tender. Even the leaf rib. Pops taught me that trick.

Gracious. What a lot of work.

I know I should, but I don’t can. :(

IIRC, Mom used to use the outer leaves to line the bottom of the pot; and aimed for the more tender, inner leaves.

I tried growing my own cabbage last year; it wasn’t too successful b/c I got it in late, and had to harvest it B4 its time [community garden deadline rules]; but I will try again.

And no, that isn’t my momma/babushka. :)

(smile) I grew up being taught that every good leaf is precious. The darker outer leaves have more flavor in the final dish too. The canning is no trouble, takes 15 minutes for either a quart or a pint. I have been canning every year since I was 18 now 66. Yikes! Less quantities now and some things I do every other year and make 2 years worth. Like pickled beets and blueberry preserves. Canning is fun and satisfying. Love opening up a jar in the middle of a cold winter. I don’t grow my own cabbage. Just buy the 8 or 9 heads at the same time.

If a leaf had a deep, stiff center vein, she had a way of shaving it with her paring knife, to thin it down and make it more pliable. Hands of a surgeon; a lifetime of experience.

Fond memory: when the men were going off to the cabin in Vermont, deer hunting for a week, she would prepare a massive kettle of Halupki for them to feast on, after a long day of tramping in the woods.

It must have taken her a day to make them, and another to cook them; secretly I think she was glad for the task, just to get them out of the house for a few days. :)

Weather is on the roller coaster ride. We went back down into the 30’s and now back into the 70’s.

We are too. Very nice day today. Mild temps and lots of sun - lots of passive solar heat from green house.
