Weekly Cooking (and Related Issues) Thread

Posted on 01/10/2018 4:39:06 PM PST by Jamestown1630

We've seen a lot of talk about 'sheet-pan' recipes recently. They are especially efficient, with easy clean-up, for weeknight dinners; and the last Betty Crocker email newsletter had a lot of interesting ones.

Here is Asian Salmon with Potatoes and Broccoli:

and the link to a lot of other sheet-pan dinners:

(Have lots of family/household issues here this week, so a short post. Carry On!

Looks good, maybe even with different meats. I might add mushrooms too.

It’s all in the timing - what goes in and roasted first, etc.

After you’ve done it once, it’s an easy weeknight approach.

The best sheet pan dinners start with Reynold’s Non Stick foil lining the pan. Easy clean up and nothing sticks! Love the stuff!

Nigella calls these traybakes. I just made one with chicken and chorizo. These type of meals make life easy. Throw it all in a pan, set the oven, and voila!

LOLOLOL! This reminds me of the latest gimmick advertised on TV — Eat this Book dinners. The pages of the book are parchment paper and have line drawings on them like a coloring book. You rip out the page, put meat, vegetables, etc. on the drawings, fold up the page like a packet and bake. Sort of like those foil packets we made on the campfire in Girl Scouts. For $14.95 (maybe $19.95) you get enough pages for 200 dinners and desserts. The same woman who advertises those copper pans is touting this Eat this Book scheme which insures that you need NO PANS. Ironic!

We do that, too! I have one wonderful, pristine sheet pan that has never been washed, because nothing but foil has ever touched it.

Balancing money against time, it’s a win.

I have Sheet Pan Suppers cookbook. Quick Chicken & Baby Broccoli with Spicy Peanut Sauce is one of our favorite meals form that book. http://ottawacitizen.com/life/food/sheet-pan-cooking-concentrates-flavours-with-easy-clean-up

That sounds like fun!

(I love those recipes for little parchment packets with a little meat or fish, some veggies, and oil and seasonings.)

That looks so delicious! I am ashamed to say my sheet-pan dinner tonight was just fish-sticks.

Well, I’m pretty plebeian, and love fish sticks. But I really like those Mrs. Paul’s fish fillets.

Oh, the evils of the crockpot! As you may recall, what I refer to as the deflavorizer.

JT... You had too, now I am Hungry! ;-)

Seriously, try this one, you may not have to wash the cookie sheet as some may try to sop up the gravy with bread and it will be all gone. Oh my this one is good...

I love that kind of stuff. I’m the only person I know who loves the smell of school lunchrooms.

I confess I mostly use my sheet pan to cook bacon and breakfast sausage. I have used it for roasted fresh vegetables. I’m going to check out your links JT, because I’m definitely interested in making a whole sheet pan dinner....especially for one.

That’s exactly what it is. The only things we’ve had success with are bone-broth and pulled pork.

The most use my crock pot has ever gotten is for warming/keeping warm at parties a Chicken and Dumplings recipe that I made PROPERLY, on the stovetop ;-)
