Back in the day when shark steaks were cheap, Mrs. Chandler would cut them into large chunks, sprinkle garlic salt on them, wrap them in bacon, and slide them onto skewers. A that point I would grill them over charcoal.

Except for the fact that saturated fat isn’t the enemy. Unhydrogenated lard is wonderful for cooking, unlike Crisco.

yeah its almost impossible to over cook heritage pork, regular factory farmed pork dries out and tastes like cardboard.
