This reminded me of something my Father once said.
He was on a troop train in WWII and it was stopped in Kansas City. He said a Black guy was pushing a cart beside the train selling pork sandwiches to the troops out the windows.
Daddy bought one and said it was the best sandwich he ever had. He probably was hungry too.

[I'm surprised that there isn't more discussion of fried bologna sandwich variants. Fried bologna sandwiches are commonly found in “flyover country.”]
Barbecue bologna is popular here where I live. Tube bologna is cut into one-inch slices then cooked on the grill. Barbecue sauce is optional. We also have the Slug Burger which is a patty made from soy and cracker crumbs then fried in hamburger grease and put on a bun with mustard and dill pickle. These dishes go back to the Depression.

New Orleans Po’Boys most notably Roast Beef or oyster po’boys. Russel’s Short Stop has some good ones, but there are many others as well.

One of Iowa's lesser-known sandwiches is a turkey and dressing sandwich peculiar to certain areas. Yep, it is meat and bread on... more bread. When I first heard of such a thing, I was aghast, but I have one every now and then (NOT around Thanksgiving if I can help it). There is a little market in Dubuque ("Cremer's") that sells them year-round.

Uh, somebody’s travels are a little revealing. Austin, New Orleans and Miami are the only southern locales. The rest are typical fare for limited northeasterners who are apparently afraid they’ll fall off the edge of the earth if they go into, for them, uncharted territory. Aiiiyeee, there they be dragons, lol.
