There are three times more cooking firesthe most common cause of house fireson Thanksgiving than on any other day of the year. And the thousands of "turkey-fryer explosion" videos on YouTube are a testament to why frozen turkeys and hot oil are an especially dangerous mix.
With the holiday coming up, Reactions teamed up with the District of Columbia Fire Department to explain the chemistry behind grease fires, how they happen and how to avoid them this Thanksgiving.

I do it all the time. Very moist turkey. It’s done when it floats.
Several good tips are:
1) Put the turkey in the pot and then fill with WATER. Take out the turkey and mark the water level. This becomes the fill level for your oil. It ensures that the hot oil won't over flow when you insert the turkey to cook.
2) Take time to THOROUGHLY dry the turkey inside and out after washing it. This will reduce the oil temperature drop when you add the turkey. It will also reduce the expansion of the oil from the conversion to steam.
3) Put the turkey in the oil SLOWLY.
4) Turn up the burner as soon as you add the turkey and then closely monitor the oil temperature closely. 360 - 375 is ideal. Below 300 is not good.

Fried Turkey is the bomb!
You just have to be very, very careful.
If you cook it in your back yard the oil will catch the grass on fire.
If you put it too fast the oil will splatter on you and it hurts like hell.
Hope you benefit from my mistakes, I only make them to help others.

I put a frozen elk steak in a crock pot once and it exploded. My kids were toddlers and they totally freaked out.
It will have to be outside.
There is no danger of igniting the grass , we’ve received several inches of rain over the last few days.
Sounds like a job requiring asbestos underware. :)
