Meanwhile my son's fiancé, a country girl university graduate with honors from the southern Ohio sticks, nods in approval when I mention how much I kinda miss liver & onions, beef tongue, ham hocks or corned beef and cabbage, collard greens, real (not sweet) corn bread, and biscuits with a dollop of red eye gravy.
We're not as extreme as the Chinese in eating anything that walks, twitches, crawls, or slithers, but we are anything but finicky.
Did you eat that liver with fava beans and a nice Chianti?
Grew up in NW Ohio in a family with Germanic roots that moved to Ohio from York County PA or Cattaraugus County, NY (depending on the branch) back in the early decades of the 1800's. Some of the family settled for a time in the Gallipolis area before heading northwest to the black swamp of NW Ohio. With this background, nothing you mentioned is strange - just good food.
Most folks don't know that you can eat every part of the pig but the oink, and when you run into some of those squeamish citified folk, best not tell them what's in the scrapple. Just tell 'em it's 'country sausage' like my Grandmother did... ;-)

Sometimes at fancy restaurants live pate will be on the menu. My daughter and I love it.
I just baked a big dish of eggplant parmesan. Absolutely love it.
At Thanksgiving there is always mashed turnip for me because once again I love it. It just wouldn’t be Thanksgiving if I didn’t have turnip.
Mexican Menudo (cow stomach)soup, barbacoa (cow brain) tacos and coles de Brusels (Brussel Sprouts) could be the highlight of your trip to Mexico.
Fried liver and gizzards... I MISS EAST TEXAS.
barbacoa can be many things, but most often it is beef cheeks, not sweetbreads.
