All restaurants have sewer-backup problems. That's where the trucks have them beat. They have no sewer to backup.

Hot food is always OK. I eat off of grills or trucks in Mexico when I go there, and I’ve never had a problem. The food has to be hot and just cooked and served in paper or on a tray.
Also, spices (curry, chile, lime juice and even salt) are very present in instant food - that is, food truck food - and these are big bacteria killers.
NYC is fine...just don’t eat the hot dogs in the tepid grey water...

Here's why: state authorities demand VERY strict sanitary controls on food trucks. As such, food trucks have to be thoroughly cleaned at least once per day.

The British used to hang their chickens and game until it was blue...meaning nearly rotted. But they liked the flavor, and cooking it sufficiently meant that there wouldn’t be any unfortunate results.

I take the same approach when eating at street vendors - especially outside the U.S. Freshly cooked hot food, served on paper or disposable plates and silverware if at all possible (just in case the dishwasher didn’t do his job, or the local wash water isn’t all that safe).

This is not news!
Restaurants stuff all kinds of non-food crap into their food, but food trucks just cook up good stuff without all that crap.

Restaurants employ people who should not be handling food. You can watch your food being prepared in a food truck, so it’s safer.
