White House executive pastry chef Bill Yosses is resigning after First Lady Michelle Obama fundamentally changed his job duties to focus on healthier food.
Yosses is leaving the White House in June to work on a new project focusing on food literacy and The New York Times says Michelle is partly to blame. The openly gay chef was hired by Laura Bush in 2007 to make his trademark cookie plates and sugar sculptures. Mrs. Obama took over in 2009 and ordered Yosses to make healthier plates in smaller portions.
Yosses began replacing butter with fruit puree and sugar with honey and agave. But Yosses was never fully committed to the new policy.

When this first caught my eye I quickly looked at who was posting it, thinking it was John Semmons.
If this were fiction, no one would believe it.
I just assumed he was a very happy fellow...
This would actually be news if he was a “straight” pastry chef.
An artist should use the best tools for his work, not the choice of some opinionated outsider.

MICHELLE OBAMAS first meeting with the White House cooks was nerve-racking for the pastry chef, Bill Yosses.
The most surprising day of my life, said Mr. Yosses, who was hired by Laura Bush in 2007.
He said that Mrs. Obama stipulated that dessert would be a rarity, not routine, at family meals, and that portions should be scaled down.
Maybe I should have been worried about my job, he said. But I was just exhilarated.
In the intervening months, because of Mrs. Obamas campaign for healthy eating, the first familys day-to-day meals have taken on national significance. And as his responsibilities have broadened to include apprentice beekeeping, weeding and the pursuit of the perfect pie crust (it includes lard, not Crisco), Mr. Yosses has blossomed along with his role.
On a recent sunny morning, he picked clumps of mint and tended his rhubarb beds in the small garden on the South Lawn. An armed member of the Secret Services counter-assault team emerged from a stand of blooming dogwood trees, eyeing him protectively, just as Mr. Yosses eyed tiny sprouts destined for a state dinner on May 19.
Mr. Yosses 12-hour days are occupied with the slog familiar to any chef, baking pastries for morning meetings in the West Wing (which no one ever eats, he said), adjusting the days menu to incorporate ingredients from local farmers (whose identities are secret for security reasons); planning for events like Halloween (as a compromise between nutrition and tradition, last year the Obamas handed out trail mix, cookies and M&Ms).
Mr. Yosses most recent mission is changing the White House tradition of the bottomless cookie plate. (Among White House journalists, President Clinton was known for going straight from a grueling run into the pastry kitchen. Only part of it is visible through a window, but reporters outside recognized him by his sneakers.)
To edge out the cookies, Mr. Yosses decided to create a child-pleasing crunchy granola bar without nuts, chocolate or white sugar. We went through many tastings on this one, he said in his skinny galley kitchen, patting the final result, a mix of toasted oats, sesame seeds and chewy dried fruits into a sheet pan.
This is Mrs. Obamas house, Mr. Yosses said, when pressed for details. Its not my place to say what dessert she might serve.
Hey, it’s honorable enough. He left over what is euphemistically called “professional differences.”
I bet Barack has made numerous late night trips to the kitchen for a snack!

President Obama has a special nickname for his pastry chef, Bill Yosses.
“The President calls Bill ‘The Crust Master,’ “ Michelle Obama revealed last year at the Governors Dinner preview event in the White House Kitchen, “because he’s a big pie guy, and he has some of the best pies and tarts that come out of this place, and the fillings are just perfection which is a problem.”
But the nickname isn’t a problem for Yosses, who tells PEOPLE that his “apple pie is certainly a crowd pleaser.”

Indeed. Why did they employ a pastry chef for five years, unless they'd been consuming his products all that time?
Not to disparage everyone who dines at the White House. But those who turn their nose up at "cream, butter, sugar & eggs," in my estimation, are fit only to dine with swine.
Of course, one will make exceptions for those with particular, proven medical problems, which force them to pass up the joys of fine cuisine.
Seems like I remember not too long ago when a chef known for her high butter, cream. sugar, and eggs recipes was run off the food channel for admitting to using a common word that is considered unutterable by people of her color. Maybe that was a convenient way to get the cream out of the menu. Maybe if you want a pastry chef you should think about what pastry is too. “You can’t have to much butter”, Julia Child.
Oatmeal raisin cookies are my favorites! I am into week 4 of a weight-loss effort, here, so oatmeal cookies sound especially tempting. My sister puts raisins on celery stalks with peanut butter, “ants on a log” for the kids.
Be still my heart....
But they might know everything there is about taking extended, expensive vacations.
Or for some Crisco and dropcloths to take back to the private(s) quarters.
