I’ve had ants before - chocolate covered ones - in Japan. A little funky, but not much to them, really.
From what I’ve been told, the bigger the bug, the harder it is to deal with for the unaccustomed. Ants and the like just get crispy and mostly taste like the seasoning they are cooked with. But since they aren’t cleaned/gutted like a fish (or what have you), the larger ones tend to be, well, “gooshy” inside even after being baked/fried. I’m told the big water beetles popular in some Bangkok markets are especially so.
That said, I’d rather eat a half-dozen gooshy water beetles than one shellful of “Balut” (google at your own risk).
