DENVER One Colorado womans love for tofu has been judged X-rated by state officials.
Kelly Coffman-Lee wanted to tell the world about her fondness for bean curd by picking certain letters for her SUVs license plate. Her suggestion for the plate: ILVTOFU.
But the Division of Motor Vehicles blocked her plan because they thought the combination of letters could be interpreted as profane.

I’d like to meet this woman; Just to see what kind of personality gets so into tofu that they are compelled to tell the world. Outside of hot and sour soup, I’m hard pressed to find one use for the stuff.

One of the guys I used to work with had a son named Christopher. They didn’t want him to go by Chris, since that sounded to feminne, so his nickname was ‘topher (pronounced like gopher).
He had a personalized plate made with his nickname.

They showed her on Fox last nigth and she totally was insisting it was tofu she loved. She didn’t even crack smile. Dh was clueless until they showed the plate spelled out.

I have taken this pie to all kinds of events and have never had anyone guess what it is. Even people who say they hate tofu like it. I have had people tell me it is too rich so serve small slivers.
Chocolate Tofu Pie
Ingredients
16 oz. Silken tofu at room temperature
1 Regular Graham Cracker Crust or Chocolate Graham Cracker Crust
1 pkg (12 oz) Ghirardelli Regular or Double Chocolate Chips
1 tsp. Vanilla
2-4 tsp water or raspberry liqueur if needed
Directions
Mix the room temperature tofu and vanilla in the blender. Put the chocolate chips into the saucepan and cook over medium heat until melted. Add melted chocolate to the blender and mix until smooth. Scrape down sides and make sure it blends well, so you do not have white stripes. You may add a little water or raspberry liqueur if too thick. Pour entire mixture into pie crust and refrigerate for about 3 hours or until firm.
I decorate the top with raspberries and mint leaves. Sometimes I serve it with raspberry sauce.
Adding the melted chocolate to tofu that is too cold can result in apeckled pie, the chocolate will not blend well if the tofu is too cold.
