The organization seems to be “Hamikdash Betzion”. I’m pretty sure they do not have a web site, so I guess you have to know someone in Israel.
The coins seem to be approved by what’s called the “Nascent Sanhedrin”, which, despite its name, has no official status.

Seriously, though, I expect it’s something along the line of how you can show a “generic image” of Jesus and most people would identify it as such, even though we don’t know what He looked like. People can even recognize is visage in all manner of thing, such as clouds and taco stains on towels.
Also, there may be some ancient depiction of him on contemporary coinage or a statue - probably not, tho. We have scarce imagery of even the most well known of ancient personages, e.g. Cleopatra.
