The owner of a popular burger chain said he will stop customers from tipping his staff because the practice has a 'racist' history. Danner Meyer, the CEO of Shake Shack, revealed that tipping customers stems from the American Civil War when the government accepted a petition to allow restaurants not to pay its staff. To get around new slavery laws, customers were advised to leave a small payment for servers so that no-one could argue that they were enslaved. Most waiting staff at the time were African-American, Meyer said.
Shake Shack is one of the most popular burger chains in the US, and is fast becoming a hit in the UK as well with five restaurants in London and one in Cardiff. In the US, it's accepted that customers should tip up to 20 per cent for every meal - but Meyer points out that in other cultures, it's very different.

I’m trying to remember the name and author of a book I read in college. I think it was by one of the existentialists. In it I learned that in Paris restaurants originally were just places to sit and people would independently make and serve food which the customer would pay for in full. So the waiter in that scenario was a small business man... sort of a food truck or food festival situation. All my children worked at one time as waitstaff. Knowing that the tip depended on the quality of service IMHO means that the server does a better job.

If you are a server, the IRS assumes you are getting a 15% tip on meals. The restaurant is required to report those earnings on your W2.

I was wondering about that. I don’t think that fast food places generally receive or expect tips. If there is not “table service”, then tipping is generally not expected, IMHO.

Yes. If you read either historical novels (current novels set in the past) or historical novels (novels written in the past), you will learn that giving a tip or “vail” to service employees other than your own was expected.
This makes “vail” part of a triple homophone, vail/vale/veil.
I am kind of taking it that this is a restaurant in England. They are pretty much all cheap bastards when it comes to tipping anyways. So it’s really a non-story

Danny actually pays his workers very well, making the tips less necessary.
It’s just a different pricing and management model. You pay me a little more for the food, but save your tips, and I’ll pay my workers a decent salary rather than expecting you to make up the difference.
As to the historical reference, there’s a lot of things that have strange histories that are irrelevant today, and Danny Meyer is off base there. The necktie came from a strip of cloth worn by Croatian mercenaries in France in the 30 Years’ War. That’s why they’re called cravates. It does not mean that when I wear a necktie I am a Croatian mercenary.

It was common for house guests to tip servants in England and the US. In the US, some of those servants were black and some were slaves.
I don’t know how tipping spread to waiters, hair cutters, taxi drivers, newspaper deliverers, etc.
Don't care. Ask people in the service jobs how they feel. This clown wants to keep control. Cash gives his staff a little freedom.

Shake Shack sprouted from a hot dog cart in Madison Square Park in Manhattan to support the Madison Square Park Conservancy’s first art installation. The cart was quite the success, with Shack fans lined up daily for three summers.
This started in 2001! Jeez fella, I was 51 then and STILL haven’t actually seen one even though they are supposed to have one somewhere in Atlanta. We can’t all be so blessed to be from NYC or thereabouts.
